Made from some of our oldest Semillon vines in years when conditions enable us to harvest grapes with naturally high sugar levels. At Grand Mayne this happens once every four or five years.
Comprising 55% Sémillon, 30% Sauvignon Blanc and 15% Chenin, the grapes are harvested by hand, before a gentle pressing followed by fermentation and then ageing in barrel for 24 months to achieve a succulent balance between acidity and sweetness.
A very unusual Blend but very interesting. A wine to drink now or age over the next few decades.

Bottle Size 50cl Grapes Sémillon 55 % Sauvignon Blanc 30% Chenin 15% Vinification Manual harvest with selective sorting. Individual plot selection. Long barrel fermentation. 24-month maturation in barrels (50% new). Tasting Hand picked by the team and some friends at the beginning of November with the noble rot. 100g of natural sugar balanced by a very nice freshness from the sauvignon and the Chenin. A very unusual Blend but very interesting. A wine to start to drink now and to age during decades. Cellaring From 5 to 15 years or more Food pairing Aperitifs, foie gras with figs, fried king prawns, roast chicken with confit of lemon, sweetbreads or medallions of veal with morel sauce and Sauternes, blue cheese, fruit tart, fruit salad.
