Made from some of our oldest Semillon vines in years when conditions enable us to harvest grapes with naturally high sugar levels at the end of October. At Grand Mayne this happens once every four or five years.
The grapes are harvested by hand, before a gentle pressing followed by fermentation and then ageing in barrel for 24 months to achieve a succulent balance between acidity and sweetness.
