Made from some of our oldest Semillon vines in years when conditions enable us to harvest grapes with naturally high sugar levels. At Grand Mayne this happens once every four or five years.
Comprising 55% Sémillon, 30% Sauvignon Blanc and 15% Chenin, the grapes are harvested by hand, before a gentle pressing followed by fermentation and then ageing in barrel for 24 months to achieve a succulent balance between acidity and sweetness.
A very unusual Blend but very interesting. A wine to drink now or age over the next few decades.

Long barrel fermentation. 18-month maturation in barrels. Tasting Bright golden-yellow robe. Nose with notes of nuts and candied fruits (apricots) carried by freshness of citrus-zest aromas. A stunningly rich and complex dessert wine with enough acidity to brighten up the palate. Cellaring From 5 to 10 years or more Food pairing Aperitifs, fois gras with figs, fried king prawns, roast chicken with confit of lemon, sweetbreads or medallions of veal with morel sauce and Sauternes, blue cheese, fruit tart, fruit salad.
